Just Makin' It Up

Well, I have officially been on a diet for 7 weeks. This whole "change the way you eat forever" thing has been a tough transition, but I'm finally beginning to feel more habitual about the way I work through each day. And by habitual I mean bored out of my mind with what I am eating. I am so picky that a complete nutritional overhaul has limited me while I learn new ways to eat the things I love. This is where this new made up recipe came about...

I saw a few minutes of Everyday Italian and the chef was making stuffed pork chops. I don't like pork and I didn't like a thing she used as her stuffing; but the idea stuck. So, I just worked with ingredients I liked.
I chopped up red, orange and yellow peppers...
Added chopped green onions, salt, pepper
And - Cream Cheese (this is the one ingredient I stole from Miss Italian) I mixed it all up, sliced chicken breasts longways and stuffed them. I put them in a baking dish, drizzled them with a little extra virgin olive oil and duped a bag of frozen green beans around them.
Then I baked it for about an hour at 350.
Yummy!!!!!! What a nice change of routine...
Not that pretty, but it sure tasted great...
I am on the hunt for more low carb, low fat ideas.... Let me know if you have any great recipes...

Fall Craftiness

I have found myself quite addicted to reading blogs lately. I love all things crafty and boy there are lots of crafty ideas out there in blogland. This weekend I took the plunge and tried a project that I read about a few weeks ago. I would love to give credit to whomever I borrowed the idea from but I couldn't find the blog again to save my life.
I know that I didn't copy the idea exactly, but that is what makes it unique. Anyway, I wanted to share my little project...
I started by going to JoAnne's for fabric. Carlie helped me pick out the floral print. It was on sale for $7.99 a yard. And I had a 20% off coupon which made it very inexpensive. Then I choose three coordinating colors that were $2.99 a yard.
I felt like these colors were very beautiful and put me in the mood for Fall. Then I cut them in 1 inch by 8 inch strips.

Then I took a coat hanger nd bent it in the shape of a square. I remember that the blog tutorial said to bend it into the shape of a circle and leave the hanger part to tie a bow on and hang it on the door. I just thought it would be cooler to be a square.
Then I tied the strips of fabric on my square frame. And Voila! It was ready for hanging...
I bought 1 yard of the 3 plain colors and 1/2 of a yard of the floral fabric. I ended up only using about half of it. So now I need some ideas about what to do with the rest. I have two sconces on either side of the door and I would love to do something with them with the remaining fabric. Maybe some smaller circular wreaths that hang from either one???
What do you think????

I can hear them calling my name...

With the amazing weather we have been having lately I am beginning to daydream of Autumn. I can hear the mountains calling my name. This time of year I am not even looking forward to a vacation. I get to do something so much better!!!!! Our church's women's fall retreat. It is one of my favorite things of the entire year. I can't wait to get snuggled in to the North Georgia Mountains and focus on building friendships and growing closer to Christ. I just can't wait!!! Paradise Lodge here we come!!!

My Favorite Things About The Fall Retreat:

1. Getting away with the girls for an entire uninterupted weekend

2. Morning Devotions on the back deck listening to Worth and Stephanie as they sing praises out of the overflow of their hearts

3. Having time to really focus on my relationship with Christ and growing closer to Him

4. Shopping

5. And my all time favorite is something we just started last year. There is a beautiful small wooden chapel just down the road from our cabin. Last year we all piled in and had the most wonderful impromptu worship service. It was such a special time of genuine worship and praise and the music that was lifted up to our Savior was beautiful. I will be looking forward to this time all weekend.

I am also so excited about the material we will be using this year. Check out the link below to see a quick promo and you will totally understand why I can't wait to get to the mountains!

What are you looking forward to at the retreat if you are going, or this Fall???
